I love a lot of things about living in the South. The heat is not one of them. Pimento cheese really, really is. Until last week I have been happy to indulge in the occasional tub of my favorite (Palmetto, anyone?) and then I came across a recipe in an old Martha Stewart magazine which--in spite of the damage to my waistline--definitely changed my life for the better.
It is so easy! All you need is:
6 ounces shredded cheddar
6 ounces shredded sharp white cheddar
1/2 C mayonnaise
2 T or so of pimentos (throw some of the pimento juice in there too!)
Cayenne pepper, salt and pepper to taste
Mix it all up together and that is that! I like processing it a bit in the food processor too, but you don't need to. It's ready to spread it on crackers, make a sammie, or just eat it with a spoon. This costs about the same as buying a tub but makes twice as much--so bonus! Saving money and taking names.
