Ingredients:

3/4 C almond meal
1 small yellow onion, finely chopped
1 jalapeno, finely chopped
1.5 teaspoons Cayenne Pepper
Instructions:
Preheat your oven to 375. Mix all ingredients together with your hands, and form into balls. Bake on cookie sheets for 20-25 minutes (mine took longer because they were kind of large).
Enjoy!
These were so good that I will keep using this recipe after the diet ends, possibly with the addition of cheese, assuming all goes well with reintroducing dairy.
Hope you love!

I'm making these tomorrow for the Super Bowl! I don't plan on watching the game, though... I'll just be eating these. :) I'll send you a pic next week of me and the party peeps pigging out on these. Are you on FB or Twitter? I can't find you...
ReplyDeleteYay! I hope you enjoy! Yes I am on Facebook at http://facebook.com/thatmommy
DeleteThank you Rachael!
I didn't remember until now to come back here and tell you how much we LOVED THEM, Michelle. :P The only changes we made were red pepper instead of jalapeno and we added granulated garlic because we add that to everything for extra yumsville's. :) Then, we served the balls with a chive/mayo sauce. So good!! Our Super Bowl plans got cancelled due to weather, so we got to eat these for 3 days! It was awesome! Haha.
ReplyDeleteI am so glad you liked them!!! And you make a good point about them making good leftovers. I may have eaten them for breakfast once or a few times;)
